Hangzhou cuisine, also called Hangbang cuisine, is a significant branch of Zhejiang cuisine, one of China's "Eight Cuisines".

Hangzhou cuisine emphasizes a light and seasonal diet. While cooking, the freshness and original flavors of the ingredients are preserved.

"West Lake fish ball soup" is a typical example. Made-to-order fish balls are matched with water shield from the West Lake. The combination of white and green is very refreshing. The fish balls are tender, and the water shield smooth, which represents the traditional Hangzhou flavor.

"Tai Chi Pearl Fish Balls" is based on the fish ball soup and is made of pearl-sized fish balls, which are then mixed with vegetable soup and pumpkin soup with shark fins to create a yellow and green Tai Chi pattern. This dish was also selected by the United Nations Headquarters for the first Chinese Food Festival in 2008 and was praised by envoys worldwide.
